As part of transparency that Google leads, the latter recently published a video on its website YouTube.com showing a part of what keeps Google as information from its visitors, presented by Maile Ohye, support engineer, the video lasts 4 minutes and a half and explains what an IP address, how Google uses it, why, what are cookies, what data is stored, etc. ...
I invite you to watch this video, which looks like a movie for teaching online training but does not deepen into too much detail. (English)
For information, Google removes some of the identifiers (IP coockies & co) stored in its servers after 18 months.
